Home made burger with Camembert and tomato relish

The last three weeks we've spent in South Africa with my parents joining from Germany. What a great holiday! I wish I could now report, that it was a culinary journey through the country, but unfortunately with a baby and a toddler, dinning out was kind of out of question. We enjoyed every lunch eating out though and had here and there really good food. Our last day in Knysna for example we found that little cafe / restaurant directly by the heads with a stunning view and even a kids corner. We were impressed by the menu and the philosophy - I actually posted the introduction out of the menu on Facebook. So after a fantastic coffee, we decided to stay longer and try out the food and we haven't been disappointed a bit, if anything we were more than thrilled. So thrilled, that coming home, I had to make that fantastic burger for lunch again and share it with you.

Home made burger with Camembert and tomato relish

Ingredients


Burger brioche buns

1 Camembert
gherkins
lettuce or romaine lettuce
mustard

For the tomato relish:


500 g tomatoes

2 medium onions, finely diced
2 gloves garlic, finely chopped
1 - 2 small red chillies, deseeded and finely chopped
~ 2 tbsp brown sugar
~ 3 tbsp red wine vinegar (7% ac)
salt
pepper
olive oil

For the patties:


500 g minced beef meat

1 onion, finely diced
1 glove garlic,  finely chopped
1 generous dash Worcester sauce
1 generous dash ketchup
1 tbsp mustard seeds, freshly ground
salt
pepper
oil to fry

Bake your buns as described in the recipe. Start with the tomato relish by coarsely chopping the tomatoes. Heat olive oil in a pan and reduce to medium-low heat, add the onions and cook for approximately 5 minutes until soft, add garlic and chillies and cook by stirring until aromatic. Add now the tomatoes, stir and cook till the tomatoes break down, then the sugar and vinegar and cook until mixture thickens, for 10 - 20 minutes, depending on the tomatoes. Depending on the tomatoes is also the amount of sugar and vinegar you're adding, so be careful. Start with 1 tbsp each and add to your taste. My tomatoes were unfortunately very bland this time, so I had to add 3 tbsp vinegar and 2 tbsp sugar. Please don't follow blind my recipes and adjust to you taste and especially ingredients you're using.

Meanwhile put the mince in a bowl, season with salt, pepper, Worcester sauce, ketchup and mustard seeds, add onions and garlic and mix properly. Add then the egg and mix again. Take and handful of meat each and form a patty to your liking. Heat your oil in a pan, reduce to medium heat and fry to your taste.


Cut the buns in half, spread mustard on both halves, layer lettuce, patty, gherkin, slices of  Camembert and tomato relish, then the other bun half. Serve with home made chips or by itself.
