Tiramisu (without egg)

During our stay in South Africa it happen to be my Dads' birthday. As I already mentioned, dinning out was  impossible with our children, so we had to celebrate at home. Since we were staying in well equipped self catering apartments, I could easily prepare something nice and as my dad loves braai, we got his favorite cut of meat (porterhouse) and served it with baked potatoes and salad. To mark the occasion I also prepared his favorite dessert: a classic Tiramisu. I chose to make one without eggs, as we were on holiday and I didn't have my fresh eggs from our farmers. It's best to prepare the Tiramisu one evening before, or even in the morning of the previous day, it just tastes better, the longer it can rest and soak.
Ingredients


Tiramisu (without egg)
250 g Mascarpone cheese
250 g cottage cheese
200 g cream
80 g icing sugar
4 tbsp Amaretto
1 vanilla pod
200 g ladyfingers 
150 ml espresso
cocoa powder

Cream Mascarpone cheese with the cottage cheese, icing sugar and the content of the vanilla pod. Add 2 tbsp of Amaretto and combine. Whip the cream stiff and fold it into the cheese mixture. Layer half of the biscuits in a baking dish, add 2 tbsp of Amaretto to the cold espresso and spoon half of the coffee mixture over the ladyfingers. Cover with half of the cheese mixture and repeat the process. Cover the dish with kitchen foil or cling wrap and leave in your fridge for 12 to 24 hours.

Dust with cocoa powder before serving.
